DESCRIPTION
Yeast,Autolyzed,occursingranular,powdered,flake,or
pasteform.Itistheconcentrated,nonextracted,partiallysolu-
bledigestobtainedfromfood-gradeyeasts.Solubilizationis
accomplishedbyenzymehydrolysisorautolysisofyeastcells.
Food-gradesaltsandenzymesmaybeadded.Yeast,Auto-
lyzedcontainsbothsolubleandinsolublecomponentsderived
fromthewholeyeastcell.Itiscomposedprimarilyofamino
acids,peptides,proteins,carbohydrates,fats,andsalts.
